The Holiday Cocktail – A Recipe

WThis is an easy version of a beverage featured on a new drinks list. It's a large-volume prepared mix that is packed with flavours associated with holiday season, which makes it perfect for hosting a celebration. Reserve the remaining syrup for brunch beverages, desserts, or to make another batch of bikinis.

The Bikini Cocktail

Makes enough for 10 guests

Ingredients for the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Place the listed ingredients inside a pan, bring to a simmer, stirring so the sugar melts. Then, take off the stove allowing it to cool entirely. Transfer into an sterilised bottle, seal and refrigerate it chilled, it will last for about a month.

To make Premix: Mix all the liquid ingredients into a big jug, let it rest for 60 minutes, then strain preferably using muslin, to ensure it's completely strained.

For serving: Add 85ml of your batch mix into a mixing glass containing ice, gently stirring gently for a minute until cold. Strain into a cold coupe glass or a similar vessel, top with some cranberries and finish by giving it a quick spritz of mandarin oil over the top.
